Corn Casserole

Corn Casserole

Quick and easy to make but a great tasting side dish for any occasion.

1-8oz cup sour cream

1-16oz canned cream corn

1-16oz canned whole kernel corn

1-stick butter

1-8.5 oz box Jiffy brand corn muffin mix “Johnny Cake”

2-eggs beaten.

Directions

1 Preheat oven to 350 degrees.

2 In a large bowl, stir together the cans of corn, eggs, corn muffin mix, melted butter and sour cream. Pour into a greased 9x11 casserole dish or a 10-inch cast iron skillet.

3 Bake for approximately 45 minutes or until golden brown. It should pop up like a soufflé.

4 Serve immediately.

Note:

When doubling the recipe, use a 3 quart casserole dish.

Authors Note: 45 Minutes of cook time gives you lots of time to stand around your Barbecue and look manly....
