Sticky Pecan Pie Squares

Prep Time: 40 mins

Cook time: 45 mins

Crust:

½ cup butter

1/3 cup firmly packed light brown sugar

1 egg yolk

1 ½ cups of flour

Using an electric mixer beat butter, sugar and egg yolk in a large bowl to blend. Add flour and beat until moist clumps form. Press over the bottom and up the sides of a 9 x 9 baking pan.

Bake until golden 15-20 mins in a 350 degree oven. (Start checking at 15 mins)

Topping: (You can prepare this while the crust is baking)

2 large eggs

6 tablespoons of melted butter (not hot)

½ cup of firmly packed light brown sugar

½ cup chopped pecans

½ cup dark corn syrup**

1 tsp vanilla extract Place eggs in a large bowl and beat lightly.

Add sugar, melted butter, corn syrup vanilla and pecans and stir until combined. Pour the mixture over the hot crust and bake in the oven for an additional 15 – 20 mins or until golden brown and mostly set. Cut into squares when completely cool.

** A nice variation is to combine some maple syrup with the corn syrup – not a lot maybe a quarter of the ½ cup.
